Sweat Pink Blog Swap: Healthy Energy Bars by Healthy Life Happy Wife
Hello Project Girl Get Fit readers! I’m excited to be posting on Casey’s blog for the Sweat Pink Blog Swap!
So, first things first…a little introduction:
My name is Alex and I blog over at Healthy Life Happy Wife about running and just life in general.
I live in NYC so I try to blog about all of the amazing things there are to do in the city (while staying healthy and fit!).
I am married (hence, the name of my blog) to my best friend in the world.
We also have a pup (who I am obsessed with)…
She is basically a little person and I love her
Finally, a big important fact about me – I am a runner.
To be completely honest, I am still growing and learning every day as I just got into distance running recently (I ran my first half marathon in March) so my blog covers all of the trials and tribulations I encounter through my training. There is definitely a learning curve!
I am currently training for a 200 mile 12-person relay race in October (with my husband!) so stop on by to read about our training and of course, our lives in NYC! We are super interesting, I swear
But now for a recipe I think you will all love – energy bars! These bad boys taste delicious, pack a ton of protein and fiber, are easy to make and did I mention they taste great? They are great for before a workout or just as a healthy snack during the day. I hope you enjoy!
First, a few photos of the process so you know how everything should look…
The ingredients
All of the dry ingredients should be chopped in the food processor first.
The mixture should be finely chopped before adding the wet ingredients.
After the wet ingredients are added, the mixture will become a little clumpy (& delicious).
The bars are formed in a sandwich bag – also, a convenient little wrapper
After a little while in the freezer, you have 8 delicious energy bars whenever you need one! Yum-o!
PS. These are husband approved.
Double Chocolate No Bake Energy Bars (makes 8 bars)
Ingredients:
¾ cup raw almonds
¾ cup raw walnuts
½ cup raw sunflower seeds
¾ cup quick oat flakes
½ tsp cinnamon
sprinkle sea salt
¼ cup light agave nectar
2 tsp vanilla extract
3 TB chocolate peanut butter (could substitute in regular PB or hazelnut spread)
¼ cup dark chocolate chips
¼ cup chia seeds (optional)
8 sandwich bags
- Process almonds, walnuts, sunflower seeds, oats, cinnamon and sprinkle of sea salt in food processor until finely chopped.
- Add agave nectar, vanilla and peanut butter. Process until thoroughly mixed and mixture begins to clump.
- Add chocolate chips and mix in by hand.
- Put two heaping spoonfuls of the mixture into each bag, sprinkle with chia seeds if you desire, and form into a bar.
- Put energy bars in the freezer until to desired texture.
- Enjoy!
Nutritional Information (per bar): approximately 250 calories; 5g fiber & 7g protein
